From San Augustin community producers in Hulia, Colombia comes this wild hybrid processed co-fermented coffee. To achieve the singular flavor, carefully selected coffee cherries are picked from Castillo, Caturra, and Colombia trees and taken to El Vergel estate to be processed. 


First, the cherries are sorted leaving only the clean ripe fruit to be packed in plastic bags for a 24 hour pre-fermentation. After an additional 24 hours of more traditional natural style fermentation in cherry it is depulped to release the precious beans from most of the surrounding fruit. What now looks like a honey-processed coffee is transformed by the addition of yeast and dried grapes. This happy trio is co-fermented in sealed containers for 5 days while the anaerobic bacteria goes to work. The result is incredible layered fruit flavors with grape taking center stage. Ten days of controlled mechanical drying ensures stable moisture levels. 

 

We’ve tried this coffee on bar for espresso and it makes a delightful latte. Brewed in a Chemex or Kalitta wave brings increased attention to its similarity to grape soda. We think this is a super fun coffee and we look forward to many more co-fermented beans in the future.
